Rodney Hansen is a Weber State University professor of Nutrition. Hansen said he believes WSU students could do a lot to improve their diets.
"As an instructor, two things stand out to me," Hansen said. "First of all, fiber intake; offhand, I'd say 80 percent of students are probably low in fiber and the second thing that pops out at me is a very low intake of essential fatty acids.
